However, Food Science and Technology alumna Dr JIN Xiaoxuan believes that everyone can have their sweets, without worrying about their health!
AuroraFood, which she co-founded, utilises technology which was inspired by a discovery in 2013 on a group of bioactive compounds from cereals and berries that slow down carbohydrate digestion. This enables the production of baked goods and desserts with a slow sugar release without the use of sugar alternatives, catering to diabetics as well as health-conscious consumers.
AuroraFood recently launched its specialty YU (屿) Cookies.
Dr Jin says, “Our technology transforms sugary indulgences into healthier and diabetic-friendly options! We are in the process of rolling out this technology for application in the bakery, confectionary, and beverage industries.”
