New Alternative Protein Module
January 13, 2022The Food Science and Technology (FST) Department’s new 13-week graduate module – titled Introduction to Advanced Meat Alternatives – is Southeast Asia’s first alternative protein module for graduate students.
The module will cover various aspects of the novel food sector, including the technologies involved in making alternative protein, how such products are regulated in various markets and how consumers perceive them.
Meat has traditionally been the main source of protein. However, a rapidly growing world population and changing consumer behaviour – due in part to health and environmental concerns – has led to growing awareness and interest in non meat-based foods as alternative nutrition sources.
Prof ZHOU Weibiao, Head of the FST Department, said, “As Singapore’s first multidisciplinary food science degree programme in Singapore, FST has always been at the forefront in addressing issues on safe and nutritious food. This module is part of our ongoing efforts to provide education covering the latest advancements in this field and its contributions to real-world problems.”
Prof Zhou added that there are plans to offer a similar module for undergraduates, but with more tailored content to fit the undergraduate syllabus and educational objectives.
NUS-FST came in 22nd in the latest US News & World Report Best Global Universities for Food Science and Technology rankings and was the only Singapore university on this global top 200 list.
