Industrial Seminar Series (ISS): Symrise
October 14, 2021The Faculty of Science welcomed Symrise, one of the biggest Flavour and Fragrance companies in the world, for the third instalment of the ISS. Symrise decodes, designs and delivers desirable flavour and fragrance solutions to customers and consumers.
The session was held on October 5 and attended by over 110 Zoom participants, comprising mainly students from Food Science and Technology (FST), Chemistry, and Statistics and Data Science. Dr Conor DELAHUNTY, Vice President (Innovation, Flavour) discussed the key strategic areas that Symrise focuses on, including sustainable sourcing, a focus on “natural”, the balancing of taste and health, and the growth in alternative protein products.
Ms CHUNG Leng Leng, Senior Flavourist, then gave a technical overview on the process of flavour creation, whetting the intellectual appetites of the attendees who major in Chemistry and FST, two key talent pools that make up the Flavour Creation and Application teams at Symrise.
Our alumnus Dr YU Peigen, Sensory and Consumer Insights Scientist, rounded up the session by introducing the Market, Sensory and Consumer (MSCI) team at Symrise. The team uses various analytical tools and consumer data to make sense of numbers and figures, which helps in creating the next winning flavour solution.
The next ISS on 14 October will feature two companies in the biotechnology sector.
